Man, I love burritos. Here’s my latest concoction for 420 calories and insane amounts of deliciousness:
- 1/4 pack of Trader Joe’s soy chorizo (or other vegan chorizo), cooked for a few min. in a pan with a splash of water
- 5 grape heirloom tomatoes, quartered
- 1 oz Follow Your Heart vegan nacho cheese (or other vegan cheese), grated
- 1 TBSPÂ Tofutti sour cream
- a splash of salsa
Mix all that up to get a nice creamy filling.
- 1 soft tortilla, warmed in oven
- a heap of lettuce, chopped
Put all ingredients in tortilla and go to town!

Yum, that looks awesome! Maybe you could add some kind of bean as well (not that it needs any additions, but I love me some beanies)!

Beans are great! Unfortunately, the husband hates beans with a passion, so a lot of the stuff I make at home doesn’t contain beans. Highly inconvenient for the vegan who loves her beans, I know, but he’s altered his eating habits pretty dramatically since we met, so I can’t complain too much. The things we do for love…
