Man, I love burritos. Here’s my latest concoction for 420 calories and insane amounts of deliciousness:

Mix all that up to get a nice creamy filling.

  • 1 soft tortilla, warmed in oven
  • a heap of lettuce, chopped

Put all ingredients in tortilla and go to town!


Any other SVU fans out there? Did you see the most recent episode, “Beef”? A woman goes undercover at a meat packing plant and winds up dead! Of course, you can only imagine the horrors she found at the plant…dun dun DUN!!!

Way to go, SVU :)

Check it out. Season 11, episode 20. Man, this show’s been around a long time.

Tofutti “better than cream cheese” is my hero. Spread it on an “everything” bagel, slice up some fresh grape tomatoes, and top it off with some dill. MMMMMmmmmm. So simple, yet so satisfying.

I eat grape tomatoes like… like grapes! They’re so good. MMMMyumnomomnyum. If you’re sick of your usual snack selection, go pick up a pack of Cherub Tomatoes. Or some other grape tomatoes that are super yummy and fresh. The Cherub Tomatoes are neat if you’re on-the-go because they come in a cute lil’ bubble pack that you can carry around, pack in your lunch or whatev. Or, you can enjoy them while playing a game of “High Flying Cherubs.” Haha, I just saw this as I was linking to their site and had to check it out.

I’m scarfing down some grape tomatoes right now. Thus the inspiration for this post. Spring time! Fresh veggies! Happy happy!

While I’m at it, I may as well shamelessly plug another product I’ve started purchasing and love: NEW All Natural Alexia Select Sides veggie combos. There are several different combos (though for some reason they aren’t listen on their website yet):

  • Roasted Red Potatoes & Baby Portabella Mushrooms
  • Roasted Red Potatoes & Harvest Vegetables

  • Chipotle Roasted Sweet Potatoes

They have yummy seasonings, too. But if you prefer your own seasoning, no matter. The seasoning is in a separate packet.

These things are so much more exciting than my typical frozen veggies: broccoli galore. No offense, dear broccoli. I still love you!

If you’re in the Minneapolis area, you should definitely check out Joe’s Garage. It’s a very cool restaurant with some great food. I had a Chinese mock duck salad that was absolutely fantastic. Here are some of our friends at Joe’s expressing a range of emotions. Actually, they were all quite happy.

City Pages gives it props for its “legendarily pretty” rooftop deck. Unfortunately, since our very nice weather is also very recent, the patio wasn’t quite ready for the season.

They have lots of yummy options for vegetarians and several items that could easily be de-cheesed, like their black bean and falafel burger, which I’m not seeing on their online menu yet. Must be new.

The restaurant has several levels of seating. Though it may look like a small restaurant from the outside, do not be deceived. The higher up you go, the cooler the atmosphere. And it overlooks Loring Park, which is a huge, totally awesome park downtown. It also happened to be where we threw around some Frisbees prior to dining at Joe’s Garage.

Ahhh. Spring is finally here!

And happy World Health Day! May your day be devoid of powdered bone slime and anything that involves “bacon and cheese sandwiched between two pieces of fried chicken.” What are you going to be doing for your health today? Being vegan’s already a great start. Good for your health and the health of the world!

My friend pointed this out to me (thanks, Poot). As if I didn’t hate KFC enough already. They’ve gone lower than low and created something more repulsive than ever before.

“It’s bacon and cheese sandwiched between two pieces of fried chicken.” Yup. Eat your heart out. And by eat your heart out I mean enjoy the heart attack you’re going to have immediately after ingesting this. Ugh. I’m so disgusted. Sometimes I think healthy foods are really making headway and then something like this shows up.

Just like the Atkins diet (which I’m pretty sure would totally allow you to eat this), this will likely bring you to a state of ketosis in no time. “Some clinicians regard ketosis as a crisis reaction of the body due to a lack of carbohydrates in the diet and consider it a dangerous and potentially life-threatening state that stresses the liver and causes destruction of muscle tissues.”

Avoiding ketosis: yet another reason I’m so very glad I’m vegan.

Ok, this isn’t really a vegan post. It’s a musical aside. Forgive me.
